Post #3 in the week of breaking in a new cast iron griddle! We had a bunch of leftover mashed potatoes siting in the fridge so it was definitely time to make a batch of potato pancakes on the griddle 🙂
My potato pancake recipe is pretty flexible; adjust to your tastes:
- 2 cups cold mashed potatoes
- 1/3 cup shredded cheddar cheese
- 1 egg
- 3 +1 tablespoons All Purpose flour
Start by mixing everything together with 3 Tbls flour. Add more flour as needed to form a stiff batter.
I preheated the griddle on the Weber Genesis Silver on Medium/High for 15 minutes and grilled up a few strips of bacon. The sound of sizzling bacon on a griddle is delicious!
Once the bacon was crisp it was removed from the griddle and drained on a paper towel. I then spooned two big portions of the batter onto the bacon greased griddle.
Flatten the batter out a little to get your pancake shape….
Grill four four minutes then flip.
Do these in batches then serve piled high with sour cream and crumbled bacon.
These tasted like a pile of loaded baked potato with an incredible crunch; delicious!
