The last installment from last week’s adventures in breaking in a cast iron griddle takes the form of Blackened Catfish.
Start by brushing your catfish filets with melted butter then coat liberally with blackened seasoning.
I used a commercial blackened seasoning for this cook. I highly recommended this stuff. I don’t have a recipe of my own to share…sorry! Here is a link to one that looks nice but I haven’t tried.
I preheated the cast iron griddle on HIGH for 20 minutes until the griddle was smoking and the Weber Genesis was at 500F.
Add the catfish to the griddle and cook for three minutes.
Here is what it looks like when it is ready to flip….
Flip the catfish, baste each filet in butter, and grill another three minutes.
Take those bad boys off the griddle and dig in!
